Can someone give me details on how I can get IE6 to run
maximised if I click on a link and "open in a new browser"

Try stretching the small window to full size. (Do not use Maximize)
Ensure that window is the last one closed and IE should remember the
size next time.

A friend of mine has a program called IE Maximizer which
does just this, it maximizes the current Internet Explorer
browser window. Strange but true.
Perhaps you might find it and other oddities at
http://www.google.com/ or perhaps http://www.download.com/

I have heard of it, but as I don't have any trouble with IE screen
size, then I haven't seen to need to try such software.
