How do I change the size of them (in tracked changes) so they display all the
changes (rather than the ellipses that open the reviewing pane)? Thanks a

You can set the width in the Tools > Options > Track Changes dialog (in Word
2007, Review > Track Changes > Change Tracking Options). I'm not sure it's
possible to entirely eliminate the ellipses, but making the balloons wider
should help.

As far as I'm aware, you don't have any direct control over that. It looks
like Word calculates it based on the length of the change and how crowded
the column of balloons is.
