Mailmerge w/ Outlook 2007 & Word

When I perform mailmerge with my Outlook contacts and Word, I would like to
use my organization's contacts which are only in the Global Address List.

Is there a way to choose the GAL contacts/distribution lists without moving
them to your personal contacts for mailmerges, etc.?

No, not within Outlook. Some of the tools at http://www.slipstick.com/addins/massmail.asp may allow you to use te GAL.

You can add GAL entries to the contacts in groups - select all and right click, add to contacts.
