Is there anyway of scheduling the running of mailbox rules??

Basically the situation is that we have a staff member that doesn't work
Mondays and Tuesdays so we have another staffer that monitors their mail
account on those two days as we have response requirement guidelines...

Currently, one user has read permissions to the others mailbox and has it as
an additional mailbox configured on their outlook client... However this
means they have access all the time.

What I was hoping to do is to either set up a forwarding rule that sends
anything coming in from the target mailbox to the guy who monitors it for
those two days, but not on all others (hence rule scheduling) or to block
permission to see the others mailbox for the three days she is in the office

But... I want to do this with the bare minimum admin from me, I don't want
to be permission re-setting or rule changing twice a week on the account

Use Out of Office Assistant. When the assistant is enabled you can run
specific rules to accomplish just that.
