Mail Merge 'Helper'

I have used Mail Merge for a good long time.
I have YET to figure out how to get in to the label setup portion to change
the label style AFTER setting up the document for the first time.
Every time I do I need to go through that portion again and select all my
fields again instead of just changing the label style.

This question is directed toward a Windows 2000 OS running Office 2000.

I have Office XP and 2003 but haven't worked with the Mail Merge Helpler in
them enough to pass judgement on them. At face value...i don't like them.
