Locking Word Settings

I would like to lock some settings in Word while I'm in school instead of
having to set this up every time I start an assignment.
I would like to lock my docs on double space and I would like to keep a
particular header.
Is there a way to do that?

Is there a way to do that?

Set up a document the way you want it, and then save it as a template
(*.dot in Word 2003 or earlier, *.dotx in Word 2007).

For each new assignment, use the File > New (or Office button > New)
command, choose Templates on My Computer, and select the template tu
use as the base for the new document.

Yes, you need to create a document template that has the settings you want.
Carry it with you on a flash drive and load it into Word, then base new
documents on it.
