Lock doc like Lock spreadsheet

We send out WORD typed contracts via email. We would
like to LOCK the document like we LOCK a spreadsheet so
no changes can be made before it is printed.

If you saveas a protected document under a new name, it
will allow you to make changes. No so in Excel.

Is there a function I can use to do this?
 
If you go to Tools->Protect Document in Word, it will keep you from making any changes to the document (depending on Protection selection). Even if you go to Save As and save it with a new name, you still will not be able to edit it. Is that what you want?

Yes. However, Tools-Protect Document gives me Tracked
Changes,Comments,Forms. Which do I select to keep any
changes from being made?

I just tested the Tools-Protect, Comments and it WORKS!

Forms is what Nick is referring to, but this protection is also easily
defeated, as all you have to do is insert the file into a new document to
remove the protection. A PDF is a better choice.
