Can I have a list box (for selecting info) in Excel that draws upon a table
in Access for it's information to populate the list box?

Do you really mean a list box or would a combo box/drop down work? You can
create a query to your Access data and then use the results of the query as a
Validation list.

Yes, a combo box would work fine. Sorry to be such a dummy, but how do I
create the query, etc? Can I create a query in Excel, or is it a query in
Access?

This is much more of an Excel question however, you can and should explore
the powerful pivot tables and other functionality of connecting to databases.
Find the Dat->Import External Data->... and selecting a datasource. Once you
have selected the appropriate data, you can use the "range" as the list for
data input.

Find the drop down list in the Data->Validation menu.
I haven't found a way to create a drop down on one spreadsheet the
references a list on another spreadsheet.

Use a defined Name ('named Range').
