Limiting Character Spaces in Windows Mail

I've just started using Windows Mail... had to, got stuck with Vista on my
new laptop.

I have searched all the options I could find and note one area where there
is a grayed out reference to wrapping lines on reaching 76 character spaces,
when using HTML format mail. I want to change this setting but can find no
way to do so. HELP!

Tools, Options, Send, Mail Sending Format, HTML Settings.
The 'wrap text at 76' setting will be grayed out unless you change the
MIME setting to None. I frankly don't know the significance of that.
