What will happen to those who are testing the Office Professional 2007 beta
when it becomes the new release on the market? I have a paid-for licence for
2003. WIll I have to buy the new version or do beta participants get a
special deal?

As mentioned on the download page it expires on February, 2007. It will then
turn into a reduced functionality state. Usually there are no special deals
for BETA testers of Office let alone for BETA users (yes, there is a big
difference in that). You can either downgrade to Office 2003 (or previous)
or upgrade to Office 2007.
