How do you change the title of columns. ie changing column "A" to "Title"?
 
Not possible, you can fake by hiding the headers and roll your own in row 1

As Peo said, you can type your own headings in the first row on the
worksheet, then hide the built-in column headings (Tools>Options, View
tab -- uncheck 'Row and column headings')

To keep your headings visible as you scroll down the worksheet, freeze them:

Select row 2
Choose Window>Freeze Panes
