I manage a team of people and meetings are back to back. How can I send out
a meeting request with a colour label so that it slides into all schedules as
a colour?

Also how do I make up more coloured labels. There are not enough colour
labels for all the categories I want.

You are limited to the number of colors that outlook comes with. You can
set a label on the meeting request.

As Diane said, in Outlook 2003 and 2007, you can set a label color in the
meeting invite but there is no guarantee that the recipient has not assigned
a different color to that label or that they even have that label.
