What are the cylindrical knobs on various computer cables such as USB
mouse, monitor cable, power cables, printer line etc? Surge protectors,
transformers? Why one on each end of my DVI monitor cable?

Probably a "line choke" to minimize RF transmitted through the cables.
Remember, any cable can act like an antenna, and can receive/transmit
signals a short distance. Used to minimize interference to the computer and
from computer!

RF (radio frequency) chokes, they reduce RF noise entering/leaving your
machine via the cable that it's attached to. it's not so much to protect
your computer as it is to prevent interference with nearby electronic
devices (radios, cordless phones, amplifiers, etc) that might pick up
digital noise from your computer. i believe RF chokes are required by law
to be put on certain types of consumer electronics that generate digital
noise (for lack of better term)... kinda like those useless warning tags on
your pillows.
