Is there something I can click to see a log of my most recently viewed
emails?

Go to Sent Items. It will give you a listing of all the email you have sent.

You might be able to use the sort at the top of the screen. There is a
control at the top for Office that lets you see what you have opened. This is
dangerous. If one come in with a virus, you will get it because it opens
automatically. Try the controls.
