Is there a way to preset my out of office assistant to turn off and on on
particular dates and times instead of having to turn it on at the exact
moment I want it to start? Thanks
 
No, but you can create a Wizard rule that replies with a specific message in
a set date span.

Not in any version of Outlook prior to 2007. I can't speak about 2007,
though.
