Is there a way to deal with spam selectively ?

I am using Outlook 2003 and have a few questions about handling spam:

1) I would like to add the following icons to my tool bar ; "This is spam,"
"This is not spam," and "Empty spam folder." (N.b., I right clicked on the
toolbar and chose 'Customize,' but I could not find those icons anywhere.
The closest I found was the 'Junk e-mail' pull down menu icon.)

2) there is some spam I want blocked never to appear in my inbox and some I
want sent to the Junk email folder for further review. How do I do that ?

3) someone has spoofed my email address, so, it looks as though i am sending
spam to myself. What can I do to stop that ?

1 - You can add the commands from the Junk E-mail submenu (from the Actions
menu) to the toolbar. There's no "This is spam" but there's a "not spam" &
the "Add Senders" commands

2 - Not sure you can have some mail deleted and some moved to the Junk Mail
folder unless you set up specific Rules Wizard rules to delete the
particular items and leave the Junk Mail filter to move things.

3 - Not much, just deal with it when it arrives in your mailbox

How do I have something just sent to the Junk Email folder ? One of the
options under the 'Junk E-mail ...' button is 'Add sender to blocked sender's
list.' I fear if I chose that option, that sender's emails will be blocked
and I will never see their emails ? I can't find any option that simply say,
send this ssender's email to the Junk Email folder. There are emails from
certain senders I want sent to the Junk email folder becuase they usually are
not important, I still need to review them.

Not sure since there's no option to simply mark a single piece of mail as
junk. I typically review my Junk Email folder before emptying it, just in
case
