Is there a way to customize the status pulldown menu in tasks?

I find it useful to drag email into tasks and then track as a project. I
tried flagging but that doesn't provide all the Task features. It would be
helpful to figure out how to customize the pulldown menu within tasks re
Status (among other things). The standard choices don't fit my workflow.
Any suggestions?
