install Updates as non-admin

I have recently locked down all domain PCs so that users are not local
admins. Does this now mean windows updates and defender updates can not be
done?
THis does not seem very practical.

Not manually. But if you use the automatic update service it will install
the updates for your non-administrative users. Just set the update service
to automatically download _and_ install (this can be done with a GPO) at
some time and all will be fine.
