When inserting a web or email address in the body of an email, how do I make
these
addresses show as a hyperlink that the recipient can click on to access
these rather
than having to copy and paste in the address bar?

Just type the complete URL with the http:// - It won't appear blue in the
message compose window until you move the cursor away (space key does that).
It isn't clickable in the compose window in case you want to edit it.

Insert Hyperlink is only available in HTML. First you highlight what you
want to be clickable and then click Insert | Hyperlink.
