individual labels...

I want to print about ten labels. Each label is going to say something
different (e.g. science books, English books, maths books etc). I can't seem
to find how to do this in WORD when I click on tools and go to 'envelopes and
labels'.

I am using Avery J8160 labels and there are 21 labels on each sheet.

Any advice would be most welcome!

Did you try leaving the text box for the label empty and then click
"New Document"? The result should be a blank 'label document'.

The blank document is set up as a table, so be sure you have table gridlines
displayed (Table | Show Gridlines) so that you can see the label boundaries.
