Incoming email problem

To anyone that might be able to help:

I have somehow altered the format of my incoming mail messages. All come
through with multiple line spacing, yet I've attempted to make sure all are
single spaced in the settings.

I would like to set everything back to the default but under stationery (I
believe this is where the problem lies), the default button is grey. (unable
to click it)

Any suggestions would be greatly appreciated! I curently have to edit every
email, change the format to HTML and correct the spacing so I can print
without a single page of info printing on 2-3 or more pages.
