Incoming e-mail doesn't treat hyperlinks correctly

I regularly receive quote inquiry's which include peoples'
email addresses. In my older version of Outlook Express,
these emails came thru as hyperlinks that I could click on
and have the reply TO: field prefilled with their
address. In my newsest version of OUTLOOK these email
addresses no longer show up as hyperlinks...why not?
 
What is your "newest version" of Outlook (which isn't the same program as
Outlook Express at all, by the way)?
