Is there a significant difference between Inbox subfolders and personal
folders? I've been told that creating subfolders in your Inbox allows the
e-mails moved there to be stored on the server vs. the personal folders' .pst
file that's stored on your hard drive.

The Personal Folders is your data file, all other folders are contained
within it.
But are you in an Exchange environment?

If your default folders are in an Exchange mailbox, then yes there's a
difference and what you state is true. Otherwise, no.
