IMAP - downloading

I have a user with about 2GB of email out on the webserver. I have Outlook
2007 connected with IMAP. However, it only appears to be downloading
headers. I have it set to download items as well, but it stalls.

In the end, how do I...

download all the emails in some 30 folders and hopefully automatically
deleting what's been downloaded so I don't have to audit

As far as I'm aware an imap account mirrors what is on the imap server, and
as such doesnt remove anything from the imap server.
