How do I enable the same (or similar) process that existed with Outlook
Express where you could select your specific identity to open each
individual's email account??

I can't find out how to do this now with my new PC with Vista (Windows Mail?).

Windows Mail doesn't support identities.

Microsoft expects you to set up separate user accounts under Vista,
and set up Windows Mail separately under each user account. That
should work if you have separate accounts on the email server, not
just a main account and one or more aliases for it.

Take a look at this option, it is not free but it will not break the bank.
