I have recently noticed that the "original" icons for sites like Amazon,
GMail and others have been replaced by IE's "e". No big deal really, but
does anybody have an explanation and perhaps a fix.

Windows store information about every file type in the registry. You can
change a registered file association from Windows Explorer. Click on
"View" menu -> "Folder Options" -> "File Types" tab. Find the registered
type in the list. The buttons on the right of the dialog allow you to
add or edit file type associations. Be careful because you can cause
problems, as a program may no longer be associated with a certain file
type.

In your case, MSIE is the "default browser" and the files are associated
with the default browser application (MIME). If you install Netscape for
example, and set it as the default web browser, the web based files will
be associated with Netscape and display the NS document icon.

Mark, I'm not sure that was Jim's question. I don't think he's asking about
program associations. I think he's asking about Favorites icon in IE. These
can change for a number of reasons. The most common way I've seen it happen
is when you clear the brower's cache. You can find more info here:
