Ok, here is a real easy one for you all (Maybe)
I need to change the color of the font below each icon on
the desktop, sounds real easy but can't figure it out

You get two choices: white or black. One choice if using drop shadows:
white with faint shadows to one side.

What color will be used depends on what color you have selected as a
background for the desktop. A light colored desktop = black text. Dark
desktop = white text. Desktop background is separate from wallpaper. The
setting is in Display> Appearance> Advanced. Select Desktop from the Items
list. Select color. Click OK.

I like drop shadows which only show up as white text. If using a light
wallpaper, I'll use a graphics program to darken its edges.
