I don't want all NOW() cells to recalculate

Greetings,

I'm trying to save event times in an openworkbook...i.e. time of one
arrival, then the next and so on. If I use NOW(), it gives me the current
time (which I want), but when I take the next time, it recalculates EVERY
cell so I lose the old data.

Of course, I don't have time between arrivals to copy and paste values. Any
ideas on how I could get Excel to return the current time in one cell while
leaving past cells alone?
