I started up my computer like normal today and to my horror the resolution
was much smaller than usual. So I went into display blah blah and changed the
resolution to 1024 by 768. My computer is now running slow, and when I am on
the internet and I scroll down pages, not just online, but in general, its
very slow even when I do change it to 800 by 600 pixels. The pixel
measurements I've mentioned are the only ones available as an option, I
could've sworn that it wasn't always like this. Please, please, please help!!

p.s. I was uninstalling a few things when I ran into this problem, could I
have uninstalled something important.

Have you tried system restore to a point before this problem occured? While
SR is not a backup solution it is just that, it's a tool to restore the
system state should you make changes that result in problems.

What did you uninstall ?.

It's the case that XP loads the default VGA and Monitor drivers - check in
Desktop Properties/Settings/Advanced or in Device Manager.
If you're lucky, just Restart - or better Turn Off and wait a minute to
restart - and you video drivers will be loaded correctly.
Otherwise, just reinstall the video drivers and then the monitor drivers.
Alternatively, you can try Windows Update and they might have your drivers
updated automatically (they're ATI or Nvidia most likely).

I can't remember everything that I uninstalled, I remember there fotoslate,
some adobe reader 7.0 (or something) yahoo search bar... nothing important.
I restarted, but the problem is still there.

That "fotoslate" (picture viewer?) might have reset(ed) your display
properties; reinstall video drivers.
