how to zero fill file slack, and unused hd space ?

A ...VERY long time ago I used to use Norton utilities, that had in it,
somewhere, a program to wipe file slack space and unused hd space, and one
could select various levels of "thoroughness" of the "writes" to slack and
free space.

Can anyone reccommend a "wiper" that's trusted and reliable ?, ....and
something that's properly written to handle NTFS and file streams etc.

I've been Googling, and trying to find information by someone that knows
what they're talking about is like searching for a needle in a haystack.

I use a program called Cyberscrub. Many features, including those
you've described. Not a Shareware/Freeware app, but the product
home page is found here:

I'm not using the latest version so can't comment on new features.

The free program Eraser from http://www.heidi.ie/eraser/ is able to write
anything you want into free space including repeated pattern writes. It
does other things too but since this is what you asked about...
