How to use "&" character in header or footer; won't print

I am trying to use the "&" character in a footer and a header. It will not
print or show in print preview but will otherwise display. How can I fix
this?

Type it twice.
The ampersand is an operator, so it gets a little confusing when you
actually want to see one.
