How to make email / Calendar, etc. available off line

I just had a new machine built for me by my Company. Running Outlook 2003, I now have to be connected to the server in order to access my email, contacts, calendar, etc. On my old machine, I could view the information as it had been "downloaded" directly to my machine. It's as if, now, it remains on the server.

I searched in Outlook HELP and wasn't able to find a good solution. Can any of you help me?
