How to "fix" certain fields and leave others for editing?

I need to create an invoice-type document, would like to be able to tab
through and enter data like "name," "date," "amount," etc. while the HEADINGS
"Name:", "Date:", "Amount:" remain fixed and unable to be changed. How do I
do this?
