How to display the e-mail address, note the name

Is it possible, in the From or To columns, to display the actual e-mail
address, rather than the name of the sender?

For a received message, the contents of the "From" header is controlled by
the sender. For a sent message, the To header will contain whatever is in
the "Display As" field for the contact you chose.
 
The sender controls that, not you. You can right click on the name and look
up the properties to get the email address.
