how to delete email address from "to" button selection

When selecting contact from “To†button, a contact is still selectable there
with a email address that is no longer current and not in the contact’s email
listings. How to get rid of this selectable email address that is not valid?

What you describe is not possible as you have described it. The To: button
is the Outlook Address Book and can only display information that resides in
your Contacts. It will track changes you make to those Contacts.
Are you instead talking about what you see when you type in the To: field?
That is the autocompletion cache. Remove individual addresses from the
autocompletion cache by highlighting the entry when presented in the
suggested names list (use your arrow key to migrate to the entry) and then
hitting your Delete key before you tab out of the field.
To clear the entire cache, follow the instructions here:
