How to create a rule to mark e-mail from sender in a color

In Outlook 2000 I could create a rule to mark e-mails from a specified user
in a particular color but I can't figure out how to do that in Outlook 2003.
When I converted from Outlook 2000 to 2003, new e-mails that I receive still
get marked in a particular color, but I can't figure out how to create a new
rule like this, I can only figure out how to mark them with a colored flag
and there are only a few color options. Thanks for your help.
