How to change email name

The messages I send say from "AboutThisUs <[email protected]>".
How do I change it to say "AboutThisUS <[email protected]>"?
The only change is the capital "S".

Although you can make the display name anything you want,
many mail servers will convert the email address to all lower case.
You have no control over that.
