How to archive fields in Access?

We keep a database of our cows in Access. With changes in legislation
concerning farming we now have 10 or more fields that we no longer require,
but do not want to delete them and the information in them. Can I archive
the fields similar to archiving records in order to make the database a bit
less unwieldy.

Not really, other than by creating a new table with a narrower table.

You can use a Query selecting all but these ten fields, and use this
Query; or you can use data entry/editing Forms that simply don't have
controls for these fields. You shouldn't be looking at table
datasheets anyway.
