How do you track e-mails related to a task?

I want to be able to identify e-mails related to a specific task. I have lots
of tasks, so assigning categories wouldn't do it. Is there some way of
maintaining a journal or some other account of the relevant emails?

The Journal might work for you. Look in Tools | Options | Preferences tab ..
Journal Options button.
