1-File > Save As
2-In the Save As dialog box, Tools > General Options
3-In the Save Options dialog box, enter a Password to open
4-Click OK, confirm the password, continue with the save.
Excel will prompt for the password whenever the file is opened. Be advised
that passwords are not "uncrackable," as many have pointed out in these
newsgroups.

I am needing to protect a document from being viewed without the password
In all Versions it is under the Save As dialog but there are
variations:
Excel 97 and, I believe, before
File > Save As
Press Options Button
Select from alternatives available
Impose or Change password
OK
Re-confirm password or passwords
OK
Save
With Excel 2000:
File > Save As > Tools > General Options
Select from alternatives available
Impose or Change password
OK
Re-confirm password or passwords
OK
Save
With Excel 2002(XP) and 2003
Two routes are now available:
Tools > Options > Security
Select from alternatives available
Impose or Change password
Re-confirm password or passwords
OK
OR (As before with Excel 2000)
File > Save As > Tools > General Options
Select from alternatives available
Impose or Change password
Re-confirm password or passwords
OK
Save
But be aware that Excel should not be used for maximum security
because there are methods of opening even password protected
workbooks.
