How do you create an online ballot for voting?

How can you create a ballot, post the results to a confirmation page and then
submit them to an email address?
 
By the time you "post" to a confirmation page the form data has been sent to wherever (in your case email)
Set up a form to send to Email (try the new page Forms Wizard) and a Custom confirmation page (also in new page templates) - set the
form properties to use the custom confirmation page
