Our local PBS stations airs half hour painting instruction programs.
There are typically 4 programs to a painting.

I recorded them on our DVR in the cable box and then copies them to
DVD-RW disks using a DVD Recorder.

Then I put that disk in the computer and copied the files from the
DVD-RW to a hard drive in folders.

I would like to edit those sessions, put titles on, delete the intro and
endings and make one big file with only the lesson to be played back
while I attempt to follow along with the instructor.

How do I do that?

Which program is best to use? I have Nero 6 but it is very confusing
there are so many parts to it.

1) Nero6 cannot do what you require

2) You will require editing software

3) DVD's are composed of a specific type of mpeg2 file
known as VOB.
This link details software that can import/edit/re-author
VOB files. It also includes a "pictorial" to guide you.

It really isn't as daunting as it may at first seem.
But you may find it easier to part with some cash
and invest in a full and proven video editing/authoring
package, such as Roxio, Ulead, Pinnacle etc etc etc.

4) If you intend to edit/author copy-protected DVD's
You will require software that strips the copy protection
prior to editing/authoring etc:
