How do I vertically align the decimal points in a numbered list?

This was a relatively straightforward process in previous versions of Word.
In Word 2007 I cannot find any reference for how it should be done.

In exactly the same way - by using a decimal tab

Since the OP asked about a "numbered list," I took "decimal point" to mean
the periods following the numbers. It's really only possible to align Level
1 numbering this way satisfactorily, by using Right alignment. Beyond that,
with combinations of one and two digits at two or more levels, you can't
align *all* the periods, though you can align on the last one.

I seem to have managed to get my default single-level numbering
right-aligned in Word 2007, as a result of playing around trying to figure
out how to update http://sbarnhill.mvps.org/WordFAQs/NumberAlignment.htm for
that version (I've concluded that the procedure is so different that I'm
going to need a whole new article for Word 2007).

I should have provided more detail in my original post.
Earlier versions of Word (2000 & 2003) allowed this alignment of the decimal
point used after the characters referencing the step (1, 2, 3 or a, b, c). It
was done using Cutomize... in the Bullets and Numbering dialog box. The
options used to make the settings are not available or not readily apparent
in Word 2007.
I hope this helps with a solution.

Assuming that this is single-level numbering, first place the insertion
point in a numbered paragraph. On the Home tab, click the arrow on the
Numbering button (in the Paragraph group), and then click Define New Number
Format. For "Alignment," choose "Right," and then click OK. If you also want
to modify the indentation and/or tab stops, right-click a number and choose
Adjust List Indents from the context menu.

Thank you. This appears to have solved the problem in my test list. I'll see
what happens in my production documents as the week goes on.

I'm glad I could help.

Note that if you are using a numbered paragraph style for your single-level
numbering, you can update the style with the new settings: Again,
right-click the list, click Styles, and then click Update <style name> to
Match Selection.

I am running Publisher 2007 under Windows Vista Home Premium Edition and the
decimal tab does not work in numbers where you need a comma (i.e. numbers
greater than 3 digits). Worked in the previous edition.

Since this appears to be a question about Publisher rather than Word, I am
cross-posting it to the Publisher NG, which is more appropriate.
