When I send attachment through my Outlook, the files are converted to .dat
files. How do I stop this?

It sounds like you have Outlook configured to send messages in Rich Text
format. Some other e-mail applications (including Outlook Express!) cannot
interpret RTF. The message arrives with a 'winmail.dat' attachment; This
attachment is actually the RTF encoded message including any attachments.

Here's how to configure Outlook so it doesn't send RTF messages...
Outlook 2002/2003 -

Outloook 2000 - http://support.microsoft.com/default.aspx?scid=kb;en-us;196784

Also, here's a freeware program for decoding winmail.dat files -
