How do I stop old saved letters from opening up with todays date?

Old saved documents open with the current date. How can I turn this off?

part of Office Professional.

From the sounds of your question, you're talking about Word. I'm guessing
you're using a Date field to represent the date, as opposed to simply having
typed the date in in the first place. You might want to use a different
field, or replace it with a constnat date value. For more help, you'd be
best off asking in a newsgroup related to Word.
