How do I show lines in a manuscript that have been crossed over?

I am transcribing an 18th century document and wish to show words and lines
that were crossed out in the original text, and can't figure out how to do it
other than use brackets, or italics etc.

Whoa. Do not do that. Sorry, Rae. I've transcribed enough eighteenth
century documents myself to have a clear picture of the chaos that would
ensue using Track Changes in this context.

Protesilaus is aiming for an exact copy of the existing document, so the
lines need to be permanent formatting, just like s/he would replicate the
random capitalizations used by people two centuries ago.
