Go to Tools-->Accounts (or Email accounts), and edit each account, and go to
the advanced settings or advanced properties (in my Outlook 2003, it's "More
settings"), and change the mail.mycompany.com to whatever you'd really like
to see.

Create five mail folders in Outlook and use rules to direct incoming mail to
each of them according to the account.
Mail is normally posted from the default account (and will be from mail
merge). With individual messages from Outlook, you can pick which account to
send from (accounts button on e-mail toolbar).

As Anne points out you can change the default information for each account
through the accounts' properties.

This newsgroup is for questions about Word - Outlook has its own group(s).
