Word doesn't do "subfiles". Each document is a separate file.

Do you understand how Windows uses a "filing cabinet" metaphor to organize
the files on a disk, where any folder can contain files and/or other
folders? All you need is to create a new folder for each client within the
My Documents folder. You can then store all the documents for that client in
the folder.

Although you can create and maintain this organization with the tools in
Word's dialogs (File > Open and File > Save As), there are more tools and
better visualization in the Windows Explorer program (the My Computer icon
on your desktop).

I am a lawyer.
I have one shared computer folder called "Clients"
In that folder is one folder for each client with the client's name.
If the client has multiple matters, each matter is given a separate folder
inside the client's named folder.
Everything about a particular matter goes in the matter or client folder. I
tend to scan in anything that I receive and my hand-written notes so that my
computer file mirrors my paper file. When a file is closed, the computer
folder is moved to a closed files folder.

I have added the Clients folder to my favorite places in the File Open
dialog.

These need to be backed up regularly and routinely! They also need to be
kept confidential.

You may want to review Word for Law Firms.
