How do I set up a drop down prompt list in a Word document?

I am setting up a Word template (to be use for Project scope change control).
I need to add a field which allows the user to select from a drop-down list
the values 'High', Medium' or 'Low'.

I know how to do this in Excel but can not figure out how to do this in MS
Word.

Any help greatly appreciated.

If the document will be a protected form because you're using other
fields from the Forms toolbar, then use a dropdown form field from the
same toolbar.

If there are no other form fields, then you don't want a protected
form because such forms involve other restrictions. In that case, use
an AutoTextList field instead -- see
