How do I send resume to contact not in address book

In the CC part of email address I 've tried manager/HR/owner/even Mr.Big and
I keep getting a message that it's not in my address book.How can I send it
if I don't know...I sent 2 by leaving the CC blank, but I shouldn't have
to..and ,yes, I am a 53y.o. novice.
 
You can simply enter the address in the field. It is not a requirement that
it exist in your Contacts Folder.
